  1. Preheat oven to 325°F. Grease and flour two loaf pans.
  2. In a bowl, mix oil, eggs, vanilla, and grated squash.
  3. In another bowl, combine sugar, flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry mixture to the squash mixture, mixing well after each addition.
  5. Pour batter into prepared pans and bake for 1 hour.
