ZUCCHINI BREAD WITH PINEAPPLE

  1. Preheat oven to 350°F. Grease and flour two loaf pans.
  2. In a large bowl, beat eggs and sugar together. Add oil and mix well.
  3. Sift together the flour, baking soda, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, alternating with the grated zucchini.
  5. Stir in chopped nuts, vanilla, and crushed pineapple.
  6. Pour batter into prepared pans and bake for 55 minutes. Let stand for 10 minutes before turning out onto a wire rack to cool.
  7. Optionally, glaze with powdered sugar icing.
