BANANA NUT BREAD

  1. Preheat oven to 350°F and grease medium loaf pans (makes 3 loaves).
  2. Cream together the shortening and sugar until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the creamed mixture, alternating with the mashed bananas, beating well after each addition.
  6. Stir in chopped walnuts.
  7. Pour batter into the greased loaf pans.
  8. Bake at 350°F for about 1 hour or until a toothpick inserted in the center comes out clean.
  9. Remove from pans and cool on a wire rack.
