BANANA BREAD

  1. Preheat oven to 350°F and grease a 9x5x3 inch loaf pan.
  2. Cream together the shortening and sugar until light and fluffy.
  3. Add beaten eggs and mix well.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
  5. Combine the sour cream with the mashed bananas.
  6. Add the dry ingredients to the creamed mixture alternately with the banana mixture, beating well after each addition.
  7. Stir in chopped walnuts.
  8. Pour the batter into the greased loaf pan.
  9. Bake at 350°F for 50 to 55 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for a few minutes, then remove to a wire rack to cool completely. Makes 1 loaf.
