Instructions:

  1. Scald the milk and let it cool.
  2. In a large bowl, mix flour, yeast, and salt.
  3. Add butter, egg yolks, milk, lemon juice, and rind. Mix until dough forms.
  4. Let dough rise without kneading until doubled in size.
  5. Roll out dough, spread with nut filling (ground nuts, sugar, and milk paste), and roll up.
  6. Let rolls rise again for ½ hour.
  7. Bake in a moderate oven (350°F) for 30 minutes or until golden brown.
