CHOCOLATE SWIRL COFFEE CAKE

  1. Preheat oven to 400°F and grease an 8x8x2 inch pan.
  2. Stir together coconut, nuts, ½ cup sugar, and 1 tbsp butter. Set aside.
  3. In a separate bowl, mix together baking mix, ½ cup sugar, egg, remaining butter, and milk. Beat for 1 minute.
  4. Pour batter into the prepared pan.
  5. Spoon melted chocolate over the batter and swirl with a knife for a marbled effect.
  6. Sprinkle coconut mixture evenly over the top.
  7. Bake for 20-25 minutes and serve warm.
