UGLY DUCKLING PUDDING CAKE

Instructions:

  1. Preheat oven to 325°F and grease and flour a 13x9 inch pan.
  2. Blend all ingredients except brown sugar and nuts in a mixer bowl. Beat for 1½ minutes at medium speed.
  3. Pour into the prepared pan, sprinkle with brown sugar and nuts.
  4. Bake for 45 minutes or until the cake springs back when pressed and pulls away from the sides of the pan.
  5. Cool in the pan for 15 minutes.
  6. Combine butter, sugar, and evaporated milk in a saucepan, and boil for 2 minutes. Stir in coconut and pour over the warm cake.
  7. Serve warm or cool with whipped cream.
