CARROT COOKIES

Instructions:

  1. Preheat oven to 350°F.
  2. Cream shortening and sugar until fluffy, then add mashed carrots, egg, and vanilla.
  3. Sift together flour, baking powder, baking soda, and salt, then add to the carrot mixture.
  4. Drop by teaspoonful onto a greased baking sheet.
  5. Bake for 20 minutes. Makes 5 dozen. Add icing if desired.
