RASPBERRY COCONUT SQUARES

Instructions:

  1. Preheat oven to 350°F.
  2. Mix 1 egg into the cookie mix to make dough. Press dough into the bottom of a buttered pan.
  3. Bake for 8 minutes. Spread jam thinly over the baked base.
  4. Cream butter and sugar until light. Add remaining eggs one at a time, beating until creamy.
  5. Stir in coconut and mix well. Spread over the jam layer and bake for 20 minutes, or until golden brown. Makes 5 dozen.
