ZUCCHINI RELISH

Instructions:

  1. Grind zucchini and onions, then mix with salt and let stand overnight.
  2. Drain and rinse twice.
  3. Combine vinegar, sugar, nutmeg, mustard, turmeric, cornstarch, and pepper in a pan.
  4. Add the zucchini mixture, along with the chopped red and green bell peppers.
  5. Simmer uncovered for 30 minutes.
  6. Pack into sterilized jars and process in a hot water bath for 5 minutes.
