LEMON FILLING FOR CAKES

Ingredients:

• 1 cup sugar
• 1 tablespoon butter
• 4 egg yolks
• 1 lemon, rind and juice
• 1 orange, rind and juice

Instructions:

1. Combine all ingredients in a double boiler.
2. Cook over simmering water, stirring constantly until thickened.
3. Remove from heat and cool before using as filling for cakes.
