BLUEBERRY MUFFINS

  1. Preheat oven to 425°F (218°C).
  2. Cream butter and sugar together.
  3. Add beaten egg to the creamed mixture.
  4. Sift together flour, baking powder, and salt. Mix these dry ingredients alternately with milk into the creamed mixture.
  5. Gently fold in the floured blueberries.
  6. Spoon into greased muffin pans, filling each cup about two-thirds full.
  7. Bake for 25 minutes or until muffins are golden brown.
