PINEAPPLE UPSIDE DOWN CAKE

  1. Preheat the oven to 350°F (175°C).
  2. Cream 1/3 cup butter with 2/3 cup sugar, then add beaten egg yolks and vanilla.
  3. Sift together flour, baking powder, and salt; add to the creamed mixture alternately with water.
  4. Beat egg whites to stiff peaks and fold into the batter.
  5. Melt additional butter with brown sugar in a pan, then add the fruit.
  6. Pour the batter over the fruit and bake for about 35 minutes.
  7. Remove and immediately invert onto a dish so the fruit is on top. Serve hot with whipped cream or hard sauce.
