POPPY SEED CAKE

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch layer pans.
  2. Cream butter and sugar until light and fluffy.
  3. Sift together flour, baking powder, and salt. Alternately add with milk to the creamed mixture.
  4. Fold in beaten egg whites and poppy seeds gently.
  5. Divide the batter between the prepared pans and bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool before spreading filling between layers and frosting as desired.
