PEACH UPSIDE DOWN CAKE

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in an 8-inch square baking pan over low heat. Remove from heat and sprinkle with brown sugar.
  3. Arrange peach halves cut side down in the pan.
  4. Beat egg yolks until light and lemon-colored, then gradually beat in sugar until smooth.
  5. Mix in peach juice and vanilla.
  6. Sift flour with baking powder and salt, and fold into the egg yolk mixture.
  7. Beat egg whites to stiff peaks and gently fold into the batter.
  8. Pour batter over peaches in the pan.
  9. Bake for 50 to 60 minutes or until a toothpick inserted into the center comes out clean.
  10. Cool slightly, then invert onto a serving plate. Serve warm with whipped cream, if desired.
