  1. Preheat oven to 325°F (163°C).
  2. In a large mixing bowl, beat egg whites, salt, vanilla, almond extract, and ice water together until stiff peaks form.
  3. Fold in sugar, then the cream of tartar with the flour and cocoa mixture.
  4. Transfer the batter to a large ungreased angel food cake pan.
  5. Bake for about one hour or until the cake springs back when lightly touched.
  6. Invert the pan when taken out of the oven and let cool upside down.
