CHOCOLATE CREAM ROLL

  1. Preheat oven to 400°F (204°C).
  2. Grease a 15x10-inch pan, line with paper, grease again, and set aside.
  3. Sift flour, cocoa, baking powder, and salt together three times.
  4. Gradually fold sugar into beaten egg whites.
  5. Fold in beaten egg yolks and vanilla.
  6. Gradually fold in the sifted flour mixture.
  7. Pour batter into the prepared pan and bake for 13 minutes.
  8. Once baked, quickly cut off crisp edges and turn out onto a damp cloth.
  9. Remove paper and spread with whipped cream. Roll up like a jelly roll.
  10. Optionally, spread with Seven Minute Frosting before rolling.
