DATE ICE BOX COOKIES

Ingredients:

Part One:

• 1 cup brown sugar
• 1 cup white sugar
• 1 cup shortening (butter or lard)
• 4 cups flour
• 1/4 teaspoon salt
• 1/4 teaspoon cinnamon
• 1/4 teaspoon soda
• 3 eggs

Part Two:

• 1 pound dates
• 1/4 cup sugar
• 1/4 cup water

Instructions:

1. Boil part two ingredients (dates, sugar, water) and cool.
2. Roll part one dough flat, spread with part two, roll like a jelly roll.
3. Refrigerate overnight.
4. Slice and bake.
