DATE COOKIES

Ingredients:

Dough:

• 1 cup shortening (half butter)
• 2 cups brown sugar
• 2 eggs
• 1 teaspoon soda
• 1/4 teaspoon salt
• 3 1/2 cups flour

Filling:

• 1/4 cup nuts
• 1/4 lb dates (cooked with a little water to make it spreadable)

Instructions:

1. Mix dough ingredients and chill for an hour.
2. Roll out dough, spread with filling, and roll like a jelly roll.
3. Let stand overnight.
4. Bake as directed. Makes 36 dozen cookies.
