SOUR CREAM PUDDING

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar, then add the unbeaten egg and beat thoroughly.
  3. Sift flour with baking powder and salt. Add to the mixture alternately with milk and vanilla.
  4. Pour batter into a 9- or 10-inch baking pan.
  5. Sprinkle brown sugar evenly over the top, then pour sour cream over it.
  6. Bake for 30–40 minutes, or until a toothpick inserted comes out clean near the edges.
  7. Serve warm in upside-down squares. Makes 9 large servings.
