  1. Combine tea, cornstarch, and sugar in a double boiler. Add pineapple and lemon juice. Cook for 15 minutes.
  2. Stir in beaten egg yolk and cook for 1 more minute.
  3. Remove from heat and fold into stiffly beaten egg whites.
  4. Serve cold over sponge cake.
