ORANGE PECAN PIE

Instructions:

  1. Heat milk in a double boiler until scalding.
  2. Blend sugar, flour, and salt, then add to the milk. Stir until smooth and cook covered for 15 minutes.
  3. Separate eggs. Gradually mix the sauce into the beaten yolks, then return to the double boiler.
  4. Add orange juice, grated rind, and butter. Cook for 5 minutes.
  5. Stir in pecans and remove from heat. Cool and pour into a baked pastry shell.
  6. Top with a meringue made from beaten egg whites. Decorate with pecan halves.
