WALNUT MINT ICE BOX DESSERT

Ingredients:

Instructions:

  1. Cream butter and powdered sugar. Add beaten egg yolks and beat for 5 minutes.
  2. Add a very small amount of green coloring and about 1/2 teaspoon peppermint extract.
  3. Fold in the stiffly beaten egg whites and walnuts.
  4. Line sherbet glasses with ladyfinger halves and alternate this mixture with additional ladyfingers.
  5. Top with whipped cream and a walnut half.
  6. Chill thoroughly before serving.
