APRICOT ICE BOX DESSERT

Ingredients:

• 1/2 teaspoon crushed vanilla wafers
• 1 1/2 cups apricot pulp (cooked and sweetened)
• 2 eggs
• 1/2 cup butter
• 1 cup powdered sugar

Instructions:

1. Cream butter, then add powdered sugar and beaten egg yolks.
2. Blend in beaten egg whites.
3. Spread a layer of crushed vanilla wafers in a dish, followed by the egg mixture, and top with apricot pulp.
4. Chill for 24 hours.
5. Top with whipped cream and sprinkle with remaining crushed vanilla wafers.
