MOCK PLUM PUDDING

Instructions:

  1. Combine all ingredients in a large mixing bowl.
  2. Transfer the mixture to a greased pudding mold or a covered steam pot.
  3. Steam for 4 hours, checking water level periodically.
  4. Allow to cool slightly before serving.
  5. Sauce for Pudding:
  6. ¾ cup boiling water
  7. 1 cup powdered sugar
  8. A pinch of salt
  9. ½ cup butter
  10. 1 egg
  11. 1 teaspoon vanilla
  12. Instructions:
  13. In a saucepan, bring water, sugar, salt, and butter to a boil.
  14. Beat the egg in a separate bowl and gradually whisk in the boiling mixture to temper.
  15. Return the mixture to the heat and whisk until thickened.
  16. Remove from heat and stir in vanilla.
  17. Serve warm over the pudding.
