  1. Beat the egg yolks with milk and salt until smooth.
  2. In a separate bowl, beat the egg whites until stiff peaks form.
  3. Gently fold the whites into the yolk mixture.
  4. Heat a non-stick skillet over medium heat and pour in the egg mixture.
  5. Cook gently without stirring until the bottom is set and lightly browned.
  6. Add minced ham or herbs if using before folding the omelet in half.
  7. Cook for another minute, then serve immediately.
