  1. Sift dry ingredients together.
  2. Beat egg yolks and milk, then mix into the flour mixture until smooth.
  3. Stir in the melted shortening.
  4. Fold in stiffly beaten egg whites last.
  5. For chocolate waffles, add 2 tablespoons cocoa, 2 tablespoons sugar, 1 teaspoon vanilla, and ¼ cup nuts.
  6. Bake in a hot waffle iron.
