CHEESE SOUFFLE

  1. Melt butter, stir in flour, and add milk and seasonings, cooking until thick.
  2. Add cheese and allow the mixture to cool.
  3. Beat egg yolks until thick and fold into the cheese mixture.
  4. Fold in stiffly beaten egg whites.
  5. Pour into an ungreased casserole, set in a pan of hot water, and bake at 325°F for about 45 minutes, or until the top is firm and browned.
  6. Serve immediately.
