CHEESE SOUFFLE

Instructions:

  1. Melt butter and blend in flour.
  2. Add milk and cook until thick.
  3. Stir in cheese, salt, and pepper. Allow to cool.
  4. Add the yolks and fold in the beaten whites.
  5. Bake for 50 minutes in a moderate oven (set the pan in another pan of water while baking).
  6. Serve immediately.
