BRAISED TONGUE

Instructions:

  1. Put tongue in boiling water and cook slowly for 2 hours.
  2. Remove skin and roots, then place in a deep pan with vegetables.
  3. Brown butter and add flour; when well browned, add 4 cups of the cooking water.
  4. Season and pour over the tongue. Cover and bake for 2 hours in a slow oven at 300°F, turning often the first hour.
  5. Serve with or without strained sauce.
