GOLDEN RHUBARB PIE

  1. Steam rhubarb in a double boiler.
  2. Add sugar, flour, egg yolks, butter, orange juice, and rind. Cook slowly until thickened.
  3. Cool and pour into a baked pie shell.
  4. Make meringue by gradually beating sugar and cream of tartar into stiffly beaten egg whites.
  5. Cover the pie filling with meringue and place in a slow oven to brown.
