HEAVENLY PIE

Instructions:

  1. Beat egg whites with cream of tartar until stiff, then gradually beat in sugar until smooth.
  2. Butter a pie tin and press the mixture into the bottom for the crust. Bake for 1 hour at 250°F.
  3. For the lemon mixture, beat egg yolks and add sugar and lemon juice. Cook over hot water until thick.
  4. Chill the lemon mixture, then whip ¼ pint of cream.
  5. Layer the bottom of the baked pie shell with half of the whipped cream, then add the lemon mixture, topping with the remaining cream.
