  1. Cover beans with water and soak overnight.
  2. In the morning, add enough water to cover, along with the salt pork, onion, celery, and carrots.
  3. Cook slowly until beans are very tender.
  4. Press through a sieve if desired, or remove cooked vegetables and pork.
  5. Season with salt and pepper, then add cream before serving hot.
