GLAZED SWEET POTATOES

  1. Boil the potatoes without peeling them until tender.
  2. Drain and strip off the skins.
  3. Make a thick syrup using the brown sugar and water.
  4. Cut each potato in half, dip in the syrup, and lay in a baking dish.
  5. Season each piece with salt, pepper, a little mace, and butter.
  6. Bake in a quick oven until the potatoes are browned (they will brown quickly).
