ORANGE MARMALADE

Ingredients:

Instructions:

  1. Wash the fruit and cut into small, thin slices, then quarter these slices.
  2. Measure the fruit, including the juice, and add three times its bulk in water. Let stand for 24 hours.
  3. Simmer for 15 minutes, let stand for another 24 hours, then measure.
  4. Add sugar equal to 75% of the volume of the fruit.
  5. Cook until it passes the sheet test.
  6. Cool, pour into glasses, and cover with paraffin once cool.
