  1. Soak watermelon rind in salted water overnight.
  2. Boil rind in water until transparent and soft, then drain.
  3. Make a syrup with sugar, vinegar, and water; boil for 15 minutes.
  4. Add rind, lemon juice, and cinnamon. Bring to a boil.
  5. Cool overnight, then reheat syrup, put rind in jars, and seal.
